This goes for all kinds of food: breakfasts, lunches, dinners, desserts. Which can make it hard to experiment sometimes because our conversations go something like this:

Me: I want to try something new tonight. Experiment a little. Any ideas?
Husband: Food.
M: What kind of food?
H: I could go for something sweet.
M: Okay. What about…
H: Cookies!
M: Oh, I can try these new cookies with…
H: Chocolate chips? Uh-huh!
M: Not quite what I meant but okay.

And so I cook or bake the usual nearly every time. But there has been some progress lately. If I don’t tell him I am making something new and he likes it, then this new item becomes his latest fixation.

The latest item that this little trick worked on? Homemade Banana Bread.

We are on loaf number 3 in the past two weeks alone. And my husband is still requesting it. All three were not eaten by my husband and I. I did take one loaf to work to share and get feedback.

What does that mean? Well I think you should try it for yourself because clearly it is a hit with my family and coworkers. In fact, I am going to cut this post short and just say TRY IT because three loaves in 2 weeks says you will love it.

Homemade Banana Bread

¼ cup brown sugar
¼ cup white sugar
¼ cup honey
1/3 cup butter, softened
2 large eggs
3 bananas, ripe and mashed
1 tsp vanilla
2 cups white flour
1 ½ tsp baking soda
½ tsp cinnamon
½ tsp salt
½ cup walnuts or chocolate chips (optional)

  1. Preheat oven to 350F. Oil a loaf pan or line muffin tins.
  2. Cream the sugars, honey and butter together in a large bowl.
  3. Add the eggs and mashed bananas to the bowl and beat into mixture.
  4. In a small bowl add all dry ingredients and mix.
  5. Slowly add dry ingredients to wet ingredients, stirring to combine.
  6. Add dough to the loaf pan or muffin tin.
  7. For loaf, bake at 350F for an hour. Do NOT take it out early or you will have a wet spot at the top of your loaf. For muffins, bake at 350F for 30-40 minutes.

This recipe makes 1 loaf or 12 muffins.

    My husband doesn’t get adventurous with food either, and I’m sure he gets irritated when I make things that are out of his “mom’s cooking” comfort zone 😉 You know what’s crazy… I’ve never made banana bread! For real! I love it… but yet, have never made it. Well that’s about to change… this recipe looks delicious, thanks for sharing!

      Hopefully the “mom’s cooking” comfort zone at least has some decent recipes to work with. Here that means shepard’s pie, pancakes, and instant rice haha!

      And really? You haven’t made it before? You definitely need to try it! It is so good when made fresh. A warm slice with a touch of butter is just perfection. Just be sure to give it all the time it needs to cook otherwise you get soft spots. Other than that it is a super easy thing to make!

    I’m a sucker for banana bread! The longer you keep those bananas, the better and sweeter it is! :)

      Me too! Can never get enough of it. I often just toss bananas straight into the freezer and wait until they get dark for making my bread.Less worrying about fruit flies!

      So you did! And what interesting stats about wasted bananas in your post. Kind of sad the numbers are so high considering you can work with them even when they are overripe!
